I immediately found my way to the Old Town. And right smack in the middle of it, the Weighing House was there, with a cheese shop at the ground floor, and a cheese museum above. I opted to explore the cheese museum, where I learned how cheese (at least the Gouda version) is made. It is of course a process steeped in tradition.
The cheese museum was actually a guided tour, and I was fortunate to be the only one visitor during that particular tour, so I had the full attention of the tour guide. I learned a lot about cheese making, which was more than the average knowledge one has perhaps. Now I understand how one turns milk into these delightful products that I love.
After spending some time in the cheese museum, I strolled around and checked out the small town. They have an Old Town, of course, which has all the trappings of a typical Dutch town. Canals, narrow houses, and tall people, they're all there. It's a lovely little town perfect for a small afternoon visit.
