Choco Peanut Butter Chia Seed Cookies

Living in Cornwall I'm always a bit slow getting up to speed with new foodie trends, the main reason being 'exotic' ingredients are incredibly hard to find here! Thank goodness for the internet where I can source ingredients like Chia Seeds, Coconut Flour and Matcha Flour ...without having to drive all the way to Exeter or Plymouth to buy them.

These protein packed cookies I'm posting today are super easy to make and a great one for the kids to help with. You just mix everything together in a bowl, roll into 12 golf balls, pop on a baking tray and flatten with a fork. Ten minutes in the oven and you have a very yummy gluten free cookie to enjoy. I used unsweetened peanut butter so they aren't overly sweet, but if you're making them for kids I'd definitely use sweetened Peanut Butter and perhaps a handful of milk choc chips.

Gluten Free Choco Peanut Butter Chia Seed Cookies

A gluten free chocolate peanut butter chia seed cookie recipe
prep time: 5 minscook time: 10 minstotal time: 15 mins

ingredients:

  • 300g Peanut Butter
  • 2 TBSP Cocoa Powder
  • 1 TBSP Chia Seeds
  • 1 TBSP Carob Syrup
  • Egg, beaten

instructions

Step 1: Preheat the oven to 180°c. In a large bowl mix together all of the ingredients.

Step 2: Roll into 12 golf ball size balls, place on a baking tray and flatten with a fork.

Step 3: Bake for 10 minutes then place on a cooling rack.
