CHOCOLATE COURGETTE CAKE


Wow! This was one of the most chocolatey chocolate cakes I've ever made!

No-one had a clue there were courgettes in it so if you were worried it might put some people off, you don't need to - just don't tell them!

This chocolate cake is so easy to make too. It uses an all in one method where you put all of the cake ingredients in a bowl and mix until combined, it really is that easy.

The finished cake was really moist and dense and kept for 5 days in an airtight container.

USING UP A GLUT OF COURGETTES


The cake is a great way of using up a glut of courgettes from the allotment at this time of year (we've had loads), and is also a good way of getting kids involved in the kitchen.

My three all helped make the cake- one of them grated the courgettes, one made the frosting and one did the mixing! In fact they really didn't need any help from me at all.

TOP TIPS FOR MAKING THE CHOCOLATE COURGETTE CAKE


Make the cake extra chocolatey by adding 100g of dark chocolate chips to the mixture.

If your grated courgettes seem a bit watery, place them in kitchen towel and ring out the excess moisture.

Serve the cake warm with the frosting for a yummy pudding  - the frosting will act more like a sauce whilst it is still warm. Once the frosting has cooled it will become a fudgy consistency.


CAN I FREEZE THE CHOCOLATE COURGETTE CAKE?


The cake can be frozen (without the frosting) for up to 3 months. Just wrap the cake tightly in foil so it doesn't get freezer burn.

      A moist and dense chocolate courgette cake made with grated courgette.

      Ingredients:

      • 250g Plain Flour
      • 300g Caster Sugar
      • 65g Cocoa Powder
      • 2 TSP Bicarbonate of Soda
      • 1 TSP Baking Powder
      • 1/2 TSP Salt
      • 4 Eggs
      • 200ml Vegetable Oil
      • 300g Grated Courgette (about 2 medium courgettes)
      • 100g Chocolate Chips
      • For the frosting:
      • 250g Dark Chocolate
      • 100g Butter
      • 2 TBSP Syrup
      • 1/2 TSP Vanilla Extract

      Instructions:

      1. Preheat the oven to 180°c (160° fan) and line a 20x30cm tin with baking paper.
      2. Put all of the cake ingredients in a large bowl and mix thoroughly until combined. Spoon in the baking tin and bake for 50-60 minutes (test with a skewer after 50 minutes).
      3. Whilst the cake is cooling make the frosting. In a microwaveable bowl melt together the chocolate, butter and syrup in 30 second bursts. The frosting is quite runny at the beginning but will become fudgy as it cools.
      4. Turn the courgette cake out of the tin and place carefully on a serving plate. Spoon over the frosting and cut into squares once the frosting has cooled.
